Joyce

While I'm on the subject of my relatives, this was my Gran. Such a beautiful little girl. Her creativity came out in the kitchen. I have her handwritten recipes which get more and more difficult to read but are a lovely reminder for me and my kids.

Great Granny's biscuits - Coconut Crisps

1/4 lb butter
1/2 cup brown sugar
1/2 cup plain flour
2 cups cornflakes
1 1/2 cups coconut
1 egg
1/2 cup caster sugar
1/2 tsp baking powder
1/2 tsp bicarb
1/2 tsp Vanilla

Cream butter and sugar. Beat in egg and vanilla. Then dry ingredients. Add a little milk. Bake 12-15 mins.

This is ... a recipe I'd like to share

Not really a recipe - more of a chuck everything together type of thing. This is my favourite summer meal and seeing as the weather is warming up it seemed like a good one.

I don't even know what it's called - my hubbie based it on a recipe from a bbq book and altered to suit what we wanted. Amounts vary - use what you like!

Nicoise inspired salad

Piece of hot smoked salmon
Boiled potatoes
Green beans
Pitted Kalamata olives
Boiled eggs
Ripe tomatoes

Dressing:

1/3 cup extra virgin olive oil

1 1/2 tbsp white wine vinegar

1 tbsp lemon juice

2 cloves garlic, crushed

Breaks up the smoked salmon into pieces.
Slice the boiled potatoes and fry in alittle olive oil (or just whack them on the barbie for a while).
Steam the green beans.
Half the boiled eggs.

Put all the salad ingredients in a big bowl and then whisk the dressing ingredients together. Pour over the salad and toss.

This tastes best if the spuds are still warm and we also use fresh salmon or tuna seared on the bbq instead of the hot smoked salmon.

I have no picture I'm sorry so you'll just have to trust me.

This is... is hosted by Three buttons and I'm late again. We had a busy weekend - more on that soon.

Oh, and if anyone can tell me why I have so many problems with spacing on my blog, please do!

Mmmm, yum.

Chloe and I got our aprons on this morning and did some baking. We made these.

Banana, Date and Rolled Oat Cookies

125g butter
1 cup brown sugar
1 egg yolk
1/3 cup mashed banana
1 1/2 cups plain flour
1/2 tsp bicarb
1 cup rolled oats
1/2 cup chopped dates

extra rolled oats for coating

Heat oven to 180 degrees celsius.
Beat butter, sugar and egg yolk until smooth.
Add banana, flour, bicarb, rolled oats and dates. Stir until combined.
Roll small tablespoon sized balls of this mixture in the extra oats and place on lined baking trays. Bake for about 15 minutes.

Give them a go there perfect for a winters day with a nice cup of tea. I know I've had my share already!

And don't forget to lick the spoon.

And please quietly ignore the mess in the background of this photo and the lack of camera skills in the next photo!

Morning tea

Today was Australia's Biggest Morning Tea a Cancer Council fundraising event. Chloe and I went to a morning tea at a good friends house and had a lovely time, eating, drinking and playing. In this spirit I thought I'd put up a recipe. Chloe and I have been going through a bit of a gingerbread man phase. The recipe is from a cookbook I had as a child hence the great aprons and wallpaper.

Gingerbread Men
100g plain flour
1/2 tsp bicarbonate of soda
25g brown sugar
50g butter
75g golden syrup
1 tsp ground ginger
More flour for rolling
Pre-heat oven to 190 degrees C.
Cream butter and sugar. Mix in the golden syrup and ginger followed by the flour and bicarb.
Roll out on a board to about 4mm thick using lots of flour or it will stick.
Cut lots of cute men and women and babies and decorate - we use little m&M type chocolates.
Bake for 10 - 12 minutes.
Put the kettle on and make a cup of tea. Sit down and enjoy.
